I’m not quite sure how this recipe has come up again. I made this last week and somehow it was on the rotation for this week. I’m not complaining because it was delicious!

Mushrooms, garlic and green onions all happy and ready to cool.
A dip in egg, then flour then back to egg and one final time in bread crumbs. The directions say to stuff the breast then dip. I found it easier to go ahead and cut the slit in the breast and coat with the flour and whatnot, then stuff with the mixture. This part of the process is rather messy and I skipped shooting while my hands were covered in goo.
Back to the pan to brown on both sides. Flipping those suckers is a bit of a trick and this is why you want to be careful with how much of the sides you cut open when making a pocket. Grandpa and I are still sorting this part out. I think we still cut them a bit too far but it’s only our second time making this recipe.
Tonight it was served with some leftover rice a roni. After chatting with my daughter-in-law today I’ve decided to start the hunt for some delicious homemade versions of this scrumptious side dish. I’d like to be able to not have leftovers on this as well.
Mushroom Stuffed Chicken Breast
2 skinless boneless chicken breast
¼ c chopped green onions
4 oz mushrooms, sliced
½ tsp fresh thyme, chopped
1 garlic clove, minced
¼ c shredded mozzarella
½ tsp salt, divided
¼ tsp black pepper, divided
¼ c flour
¼ c bread crumbs
1 eggs, beaten
2 Tbsp olive oil
Sauté mushrooms &onions in oil over medium heat, about 10 minutes. Add garlic & thyme and cook 1 minute. Remove from heat and allow to cool. Add cheese, salt and pepper and mix together. Cut a slit in breast and stuff each with half of mixture. Season with remaining salt & pepper.
In 3 shallow dishes place egg, flour and bread crumbs. Coat with egg, then flour, then egg and finally with bread crumbs. Heat remaining olive oil and brown chicken on both sides for 2 minutes. Bake in 350° oven for 20 minutes or until chicken is done.Tags: chicken
