Part of the challenge of having a lap band is finding ways to balance what I can eat with what a “normal” person can eat. Each bander is different. For me, traditional sandwiches with squishy bread or buns are an absolute no.
So when I had a craving for good old sloppy joes once again it was Pinterest to the rescue. This time with the idea of making sloppy joes into enchiladas.
Normally rolled up tortillas are also out for me but I found that if I over fill the enchilada (by normal standards) I can end up with not much doubling up on the tortilla and also more protein in the middle.
There’s nothing ground breaking about this recipe. Simply make up your sloppy joe mix and roll it up in a tortilla then bake.
Of course if you want to make yours a more normal enchilada size you’ll divide the meat into smaller portions and use a larger pan.
